Savion is a collaboration of hand crafted baked goodness. Sprouting from the rich baking heritage of the Ukraine, owners Sergeiy and Ina were true bagel connoisseurs, they hunted and tasted all different varieties of bagels until they found Savion in Melbourne, Australia. Sergiy and Ina just had to be part of this truly unique bakery and so they purchased the business in 2013. Introducing unique East European recipes, Sergiy and Ina have carried on the Savion legacy and taken it to the next level by contributing technique, finesse and love to their baking.
Savion opened in 1998 with old fashioned traditional bagels, cakes and exquisite coffee. Since then their repertoire has evolved into a range of classic inspired eastern european recipe baked in a rustic way.

We have 8 different varieties of bagels, with special editions featured regularly. Our bagels are produced with Australian flours and ingredients and are the product of a traditional 18-hour boil and bake process.

Schmucks founder Jeremy Marmur has brought the bagel game to the city, drawing on his Jewish upbringing to bring city dwellers bagels with a distinct Polski bent. Spotting a “hole in the market” (pun intended), Marmur collaborated with hospo guns Tommy McIntosh and Ben Avramides, both of whom co-owned Ripponlea’s Hawk and Hunter and Brighton’s Little Ox, deciding to do away with tradition (to an extent) to set up a bagel shop that will change the game on what can be scheamered on bagels.
The Schmucks house speciality is the Vegemite bagel, a bagel that conveniently does half the work for you . For slightly more substantial meals, the Schmucks crew will freshly whip up sandwiches from an assembly line that features whole McClure’s pickles from way across the pond in Brooklyn.
