Bar Americano was opened by Matthew Bax in 2011 as homage to the Golden Age of drinking, the time of the “American Bar”. The drinks of the “American bar” are the USA’s greatest cultural export. The concept was born out of foreign demand; well-heeled Europeans discovered these liquid delights in the Jazz cities of Chicago and New York. They (along with the thirsty Yanks fleeing the drought of Prohibition) cried out for these innovative concoctions back in Europe. The “American Bar” is the perfect balance of American “get-up-n-go” and refined European service.

A bar straight out of 1920’s prohibition America, from the moment you walk in you are taken back to a much forgotten era. Once inside you can sit up at the bar, at one of our shared high tables, our low banquette and coffee table seating, or a more intimate and private booth. Secretly hidden behind our book case, the Whisky Room owes its name to our large collection of rare and exclusive whiskies that live here. The Whisky Room can be transformed into a private space and is the perfect place for private events for groups of 15 – 40 guests. The Eau-de-Vie Library is home to our degustation table from where we host our 5 course, cocktail degustation experience. This communal table is available for up to 16 guests and can also be hired exclusively for corporate and private events.

We are restless creators: constantly evolving drink menus, inventing strange and wonderful new flavours for your mouth hole and bending rules as we twist and reshape the classics, utilising and supporting Australia’s glorious local suppliers… All under the watchful eye of Mr. Bill Murray. We like to think of our drink creations as Modern Tiki. What does this mean? I’ll tell you. Jeez, give us a chance… Anyway, we start with fresh bold fruit flavours and then bring the booze. Don’t get us wrong, we love spirits! Of course we do – we’re a gin and rum bar!
