Tucked away in the streets of Spring Hill, La Cache à Vin transports diners and wine-lovers to the subterranean cellars of Thierry’s beloved Burgundy. From the moment he entered the disused historical wine cellar on Wharf Street with its familiar smell of earth and fermenting wine, Thierry knew this could be something special. In La Cache à Vin, he has created a uniquely French feeling restaurant showcasing those heart warming Lyonnaise-influenced dishes that have become synonymous with Galichet restaurants. La Cache à Vin has an ambience like no other as you move from the warm and welcoming marble bar, through all the various nooks and crannies and finally into the private dining room. So many spaces for so many different occasions with accoustics that allow for normal conversation no matter how exhuberant the guests.

I grew up in the beautiful region of Normandy, famous for its apples and Calvados. My passion was gymnastics and I became a physical education teacher after studying at a well-respected school in Montmartre close to the famous Moulin Rouge in Paris. I was born with an adventurous spirit and later, in 1971, I packed up my four little children and two large trunks and left Paris for Australia. The adventure began when we landed in Melbourne and with the trunks tied to the roof of a Morris 1500, we set off for Sydney. The trip along the dry and dusty countryside, very different to my homeland, was a disaster. Bouncing over a big bump in the road caused the trunks to fly off the car into a ditch. We were rescued by a farmer who put our scattered belongings into the back of his ute and, Voila! … disappeared down the road, a trail of dust behind him! With much alarm we took off after him following the dusty cloud. Arriving at Yass, there was our farmer standing by the Border sign, a big grin on his face, saying, “What took you so long?” This was my introduction to Australian humour. I loved it!
